I don't know is the short answer.

Could it be that having the extra water in the system gives a bigger capacity (more water can hold more heat).
But on the flip side more water takes a greater loss of energy to cool down.
So if the pump cant get the water through the rad quick enough the water thats getting hot stays around for a lot longer and gets hotter.
But if the water is going slower it should get the extra cooling it needs, because its part of a bigger capacity system,so it should be cooler.

Maybe just use water wetter like rob suggested.

Are you saying that with the Stat in it over heats and without it is fine? Faulty Stat maybe?

As the water gets hotter it cools more quickly, Temp above air quadrupled if I recall so it temp is 10deg above air it cools 10,000 times more than 1deg above.
So your problem is either an air lock or a restriction when the Stat. is in i.e. not opening. Try putting the stat in a pan of water, suspended in the middle with a cheap cooks thermometer to measure when it opens. I would also check the design of the system, that water is going where it aughter!
The way the fan runs can be checked with a piece of kitchen roll!!.
best of luck indeed the low temp on the track is not ideal for the oil either it certainly won't need the cooler.

Well I've been out for 80 miles and ragged it today. There are no cooling issues anymore so the cowl/undertray is essential. I'll take some water wetter with me for the trackday. Happy days.
