Here are a couple of pics of my Steering Column link.

The link was made by getting hold of an Allegro steering UJ link, cutting it in half, and re-joining the 2 ends with a hollow rod welded to them. I expect RAW can supply you with this.

Not sure of the details of this in terms of a striker (I have a Phoenix, which is the same, but different).
But, the spline on the Escort rack is the same as that on Sierra (and loads of fords), so you could get a Sierra lower downlink. Phoenix uses Sierra wheel, so I guess the upper end of it all is different. www.Rallydesign.co.uk sell a few steering bits that also fit these but you can't avoid a bit of welding at some point I think.
If you e-mail me I can send you a pdf of the build manual (phoenix manual = striker manual + 3 pages!), I tried attaching it here, but it wouldn't allow as the file was too large (256KiB limit).
